  • 1 1/2 cups rolled oats, ground into flour
  • 3/4 cup granulated sweetener
  • 1/2 cup dairy-free chocolate chips
  • 1/2 cup + 1 tbsp cocoa powder, unsweetened
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/3 tsp salt
  • 1 1/4 cups shredded zucchini, tightly packed
  • 1/2 cup nut butter of choice
  • 1/4 cup plant-based milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 360°F (182°C) and line a loaf pan with parchment paper.
  2. In a food processor, blend the rolled oats, sweetener, cocoa powder, baking powder, baking soda, and salt until combined.
  3. Add the shredded zucchini, nut butter, plant-based milk, and vanilla extract to the dry mixture in the food processor. Blend until smooth.
  4. Stir in half of the dairy-free chocolate chips until evenly distributed.
  5. Pour the batter into the prepared pan and top with remaining chocolate chips.
  6. Bake for about 35-40 minutes until a toothpick inserted comes out clean or slightly crumbly.
  7. Allow to cool completely before slicing and serving.
